Today I had the best lunch! It was chopped salad from a recipe in Natalia Rose's book "The Raw Food Detox Diet" (which I recommend). It's very colorful and one of the most delicious things I've had in a while, except for my raw chocolate cake. So here's a picture and the recipe.
Classic Chopped SaladMakes 4 Servings
1 cup fresh haricots verts (green beans)
3 ears fresh corn, kernels cut from the cob
1 yellow bell pepper, chopped
2 large carrots, chopped
2 cups grape tomatoes, sliced in half
1 zucchini, chopped
3 tablespoons fresh chives, minced
Mix all ingredients in a large bowl.
Andy even liked the salad, except for the bell peppers and zucchini.

Your salad looks great! I've been really interested lately in eating more raw , though I am not really interested in going 100%. I definitely want to get some books about raw diet though and educate myself. I have been over at happyfoody lately and I want to start adding green smoothies to my diet, and my boys, and we'll see about Ryan. Anyways, i also just wanted to say hi. I don't think i ever emailed you back the last time you emailed me. We are leaving here April 30th and so things have been busy just with packing and stuff. Talk to you later!
